2027 Calendar Preservation is where materials confront time. In an era of accelerated spoil and waste, we aim to slow the clock. Preservation takes hours, days, weeks. The taste of dried fruit in deep winter. Durable, salted fish. Cured meats. Fermented milk. Preserved food is practical, resilient to temperature changes. 

Preservation means being portable and being free from the need for refrigeration or heating. Preservation is transformative. It changes the texture, concentrates the flavor, and extends the life of the thing preserved.

the SPICY edition

Spices move through trade, theft, and travel. Spiciness also catalyzes change on both culinary and cultural levels, and can represent moments/acts of resistance and the individuals who rise to occasions calling for liberation.

Spices include turmeric, sage, cayenne pepper, salt, za’taar, anise, Old Bay, wasabi, pimiento, black pepper, vanilla, and gochu!
